This recipe came out of my desire for a pizza sauce that’s nearly as easy as buying a bottle of the pre-made stuff but tastes a hundred times better. It’s bright, fresh, and comes together in seconds. The secret is a couple of pantry ingredients and one item that absolutely deserves a spot in your pantry.

When fresh turmeric started appearing at the local produce market here in San Francisco, it was a revelation worlds away from the powdered stuff in the cabinet. The many uses of this root are only starting to really be discovered in my kitchen, but experimenting comes at a high cost: difficult-to-remove stains on my fingers. Fresh turmeric ranges in color from pale gold to screaming orange, and it’s not the most flattering look. In addition to staining your skin, it also has a nasty habit of adding peach tint to fingernails.

(Note: These methods work for powered turmeric stains, too!)

By now you’re probably very familiar with the fact that cauliflower is a magical ingredient. It no longer languishes on a sad crudité platter, waiting for some poor soul to dredge it through too much Ranch dressing to mask its rather bland flavor. It was a couple years ago that I first saw people turning cauliflower into rice or pizza crust, and then it became used as a base for mac and cheese and mashed “potatoes.” In other words, cauliflower can be transformed into anything if you believe hard enough. It’s kinda like tofu in that way.

If you’re making a list of things that are LITERALLY THE WORST, the top three have to be some combination of accidentally getting your sleeve wet when you wash your hands, being forced to leave a voicemail for someone (or the horror of realizing that someone has left a voicemail for you), and sad, thin chili.

Buying fresh spices, measuring, and mixing them makes even the speediest meals taste better. Chili spice mix is a good example of what making your own spice mix can do you for you. Its ingredients are few — six, if you like to keep score — and at least half of them are probably in your spice cabinet already. It makes a near perfect pot of chili, but can just as readily spice up a pot of black beans or a pan of roasted sweet potato cubes. Here’s what you need for chili spice mix at home.

If I could be anybody at 70 years old, I would want to be Ina Garten. Actually, scratch that, I’d want to be her at any age. I want her Hamptons house and her $15,000 French stove, and I want to smile all the time and look 25 years younger than I am — just like she does. The last part I’m still optimistic for, but the Hamptons house and the shiny oven are things I might just have to be content with by watching Ina on TV. Ina Garten has beautiful things, but a person doesn’t need Ina Garten-level cookware to make food like she does. A few quality pieces will do it for most of us.
