Last week I got to go to Aldi’s U.S. headquarters in Illinois. The visit was packed full with a tour of one of the newly made-over stores, an amazing lunch, a wine tasting, a peek at the test kitchen, and a blind taste test of Aldi items versus their name-brand counterparts. As a frequent Aldi shopper, I walked into this taste test with a ton of confidence — more confidence than I should have had, apparently.

When we wrote a piece on everything you need to know about “Pagels,” the gluten-free, Paleo bagels taking Instagram by storm, we were unaware of one major caveat: There is a lot of drama around ownership of the original recipe.

We’d go as far as to say that the supposed creator of the Pagel is in a bit of a pickle.

While Bedrock Bagels might be the first company to mass produce “Pagels” and sell them nationwide, they’re under fire for claiming to have invented this take on a Paleo “bagel.” (And yes, between the ontology of ownership and the question of “what is a Paleo bagel anyway?” we are wearing out the quotation mark key on our keyboards for this story.)

In a conversation with Kitchn, the company founder Steven Friedman admitted that after having discovered the magic of cassava flour while on a wellness retreat in St. Lucia, he returned home to “research recipes from various bloggers, chefs, and cookbooks. From that the Pagel was born.” Unfortunately, we’re hearing now that he may not have given credit where credit was due.

When Ina Garten says to do something, you do it. For example, if Ina suggests buying a certain type of good vanilla extract, off to Williams Sonoma you go! If Ina Instagrams her method of effortlessly arranging flowers before entertaining a swath of Hamptons neighbors, you run to the florist. If Ina recommends using a very specific brand of canned San Marzano tomatoes, you use them — and don’t ask too many questions.

Let me put it this way: If we all had to hunker down and make roast chicken and drink whiskey sours every Friday night for the rest of eternity, in hopes of becoming just a little bit more like Ina, would that really be so bad? Especially if that meant we all had to save a little room for dessert.
