With their crispy, crunchy edges and creamy, tender centers, crash hot potatoes were quite possibly the best thing I ate in 2018. So to kick off the new year, I was eager to play around with a shiny new version. These smashed sweet potatoes (not to be confused with mashed sweet potatoes) are just as delightful. As they roast, the naturally sweet vegetable — slicked with olive oil and tossed in garlic, dried herbs, and plenty of salt and pepper — begins to caramelize and brown. And the sprinkling of Parmesan cheese creates a crunchy topper on every round, almost like a little frico to go along with every bite.

My New Year’s resolution is to be a little more like Beth Moncel in 2019. She’s the mastermind behind Budget Bytes, a wildly popular blog-turned-Instagram-turned-app born out of an aim to bust the long-held myth that cooking on a budget means eating canned beans and ramen noodles every single night.

Beth’s dishes are flavorful, inventive, and colorful. Since she got her start in 2009, Beth has been teaching people how to eat delicious food made with a multitude of ingredients. Her trick? She analyzes the cost per amount of ingredient used for every single recipe she makes — a technique she learned while working at the prepared foods counter at Whole Foods. In fact, she calculates out price per recipe and price per serving so you know exactly how much you’re getting and what it’ll cost you (i.e., this vegan winter lentil stew will cost you $5.08 for the entire pot, and $0.64 cents per serving). Worth it? I think yes.

We got a chance to chat with Beth to find out what a week of dinners looks like for her, where she chooses to cut corners, and the one thing she likes to splurge on (when she lets herself!).

If you’re wondering what a dump dinner is, let me enlighten you. It’s a slow cooker or Crock-Pot recipe that only has one main step: dumping all of the ingredients in. These fuss-free dinners are perfect for hectic weeknights where the last thing you want to do is spend an hour cooking. You simply prep all of your ingredients, toss them into the slow cooker, and let the appliance do the work. While some dump dinners require an additional step or two (such as garnishing with fresh herbs or cheese at the end), the bulk of the work is done in the first step — so you can sit back and relax.

Oh, and the best part about dump dinners? For many recipes, you can get them started in the morning, go about your day, and come home to a hot dinner. You can also prep all of the ingredients and stash them in storage containers or zip-top bags until you’re ready to get cooking. I love to purge my home of junk — and if you’re moving (or got a lot of stuff over the holidays that you can’t really use), you’re probably getting rid of things left and right. But unlike other people, I approach this task with some consideration to where our donations will end up: a thrift shop.

You see, I worked at a second-hand store for a year in college. In that time, I saw countless bags, boxes, and bins of donated items be carefully sorted through the staff behind the scenes. I found out what was kept, what was recycled, what was doomed to sit on the racks and shelves for eternity, what was gone in seconds, and what couldn’t be accepted. Just because those pesky things aren’t sitting in your kitchen anymore, it doesn’t mean they’re somewhat easier for another person to have to deal with.

So knowing that staff sees more broken plates and weathered coffee makers than you’d imagine, here are the three mistakes I saw most often.

Anyone who has ever stood in front of a wall of white paint swatches can tell you that there are somehow hundreds (thousands?) of different shades of white. Snow is different from eggshell is different from cotton … you get the point.

Apparently there are lot of factors that go into finding the perfect white paint color, so we consulted expert interior designers to find out their favorites. We learned that the right white is not too creamy, sterile, or cool, but just the right amount of warm, soft, and fresh. Hue knew? (Sorry.)

I might be in a rush to get to work, or don’t have the right ingredients in my pantry, so pancakes have become a special-occasion meal — one that I only eat if we’re going out to breakfast. That’s why Trader Joe’s Pancake Bread is such an intriguing idea: What if all you had to do to enjoy a pancake is buy a loaf of bread? It’s simple, it takes significantly less time than actually making a batch of pancakes, and you can eat it on the go.

Over the past three-and-a-half years, I have completed seven rounds of the Whole30 program. The Whole30 was created by Melissa and Dallas Hartwig, and it has exploded in popularity recently. Most of us would be hard-pressed to find someone who hasn’t done Whole30 or hasn’t thought about doing Whole30. The program has plenty of supporters boasting life-changing results, and I can say that I am one of the people who has experienced these tremendous results.

Even though Whole30 explicitly states that it is not a weight-loss plan, I fully admit that I wanted to lose weight, and to my own surprise (and disbelief), I’ve ended up losing more than 60 pounds since I did my first round of the program.

The only thing that has surprised me more than losing that much weight is that the weight loss isn’t even the biggest reason I keep coming back to Whole30 over and over again.
