Weeknight dinners are my jam — I love gathering with my little family around the table and talking about our days. I also have a 5-year-old who is obsessed with eating out and at least once a week asks, “Can we have a [dinner] date out, please?” The answer is routinely no, but that doesn’t mean I don’t indulge her in making Wednesday night dinner feel special to cure her craving.
Thankfully it doesn’t take a ton of effort to make weeknight dinners feel special. Some things are obvious, like actually using a tablecloth or wine glasses, but here are nine of my favorite ways to make a weeknight dinner feel special for every diner at your table.

Budget-friendly chicken thighs — cooked simply in some olive oil with salt and pepper — consistently deliver juicy, flavorful results. But sometimes you want to punch things up a little, even if it’s a weeknight and you don’t have much time to spare or energy to expend. Once you start traveling with kids, you develop a deeper appreciation for the vacation rental. Beyond the obvious amenities like kitchens with full-sized fridges and bath tubs, these rentals have more space for the kids to run around and also to give you some peace and quiet to relax. Airbnb and VRBO both have a kid-friendly filter that you can and should use, but “kid-friendly” means something different to me as a parent of two wild-spirited preschoolers than it does to a homeowner with tween-aged children. It’s Monday morning. Images of the weekend flow through your mind as you snuggle deeper into your pillow, reliving them. Then you open your eyes, see the clock, remember the presentation you have to give in an hour, and, heart racing and teeth clenched, you rush to the kitchen to make coffee. That’s one version of Monday morning.
Here’s another: You set the alarm 15 minutes earlier and ease into the day by simply paying attention to your breathing. I’m talking about meditating — and if even hearing that word makes you feel antsy, bear with me for a minute, or rather 10. After all, it’s said that practicing daily for just 10 minutes could help you feel calmer and more grounded.
