One of my favorites parts of travel is bringing things home. I love the idea of a souvenir that stays with me — at least for a short while — and reminds me of my adventures elsewhere. Sometimes it’s an intangible thing, like a way of eating dinner, but more often than not it’s a more physical (and edible) treat that I can savor from the comforts of home.

My most recent trip to Toronto yielded a few really great souvenirs — some of them expected and a couple that were more surprising. Read on to find out the five things I brought home from Canada (maple syrup not included!).

Welcome to Kitchn’s series My Healthy Morning, where we show you how one person greets the day in a way that makes them feel their best. Each post will chronicle how that person defines healthy for themselves, and the habits and recipes that make their morning a little bit better.

Ella Mills is the U.K.-based entrepreneur behind a wildly successful plant-based empire. You most likely know of her blog, Deliciously Ella, where you can find recipes that are accessible and delicious, or her Instagram account, which has a staggering 1.1. million followers thanks to double-click-worthy photos, inspirational quotes, and pics of her dog Austin. She also runs three London cafes, has a line of healthy breakfast bars and granolas, and recently published her third cookbook, Natural Feasts: 100+ Healthy, Plant-Based Recipes to Share and Enjoy with Friends and Family.

But what most impresses us about Ella is not her crunchy orange, coconut, and vanilla granola (seriously, so good) or her sweet potato and chickpea stew (definitely #miraclemeal material). In person, Ella is completely humble, down-to-earth, and as confounded by golden milk as we sometimes are. She’s the kind of person who confesses to making and eating an entire tray of energy balls.

Between geeking out over Karlie Kloss sightings and the awesome absurdity of Cafe Gratitude, she shared with us what healthy means to her and what her morning routine looks like.

Our bodies are designed with a simple hunger mechanism: hunger pangs trigger the desire to eat, and when our stomach feels full, it’s an indication that we’ve had enough to eat. Pretty simple, right?

One of my strategies for keeping our budget in check is to have about a 50/50 mix of meaty and meatless dinners each week. But when I’ve busted my budget — say, after moving into a new house and splurging on a new dining table — a week of meatless dinners can save me.

This week’s meal plan is full of new-to-us vegetarian recipes that use inexpensive staples to keep our grocery budget low. Each recipe is hearty enough for cool fall weather and will satisfy both adults and kids alike.

One bite of this saucy, cheesy casserole and I was instantly transported back to junior high and the carb-filled dinners where my basketball team squeezed around a table with paper plates piled high with the requisite homey baked pasta. Only those team dinners never included a meal as good as this!

Reminiscent of classic pepperoni pizza, this weeknight casserole is made with a mess of curly noodles in place of the doughy crust, just the right ratio of sauce to melted cheese, and thin slices of pepperoni that crisp up as they bake. You’ll also love that it comes together in a pinch with just five ingredients.

Could it be possible we will be offering up to the world a generation of metabolically ‘near-perfect’ humans?

– Actually, Ontario, I’m planning to raise an army of optimized humans with perfect metabolic flexibility. The whole keto thing is meant to make them so efficient at burning body fat that I barely have to feed them or maintain a supply chain when they’re on campaign.
