In the weeks leading up to my first round of Whole30, I spent hours scouring Pinterest, blogs, and what felt like every corner of the internet searching for delicious-sounding compliant recipes to fill my upcoming meal plan. While I felt productive about planning ahead and lining up recipes, it was also extremely time-consuming. And to be honest, while I came away with a long list of recipe ideas, I felt just okay about them; they didn’t necessarily get me excited.

But a couple of weeks into the program I had a revelation about the way I choose recipes for my Whole30 meal plan, and it changed everything. Not only did I save time meal planning, but I also felt really excited about the recipes I added to my plan.

As a vegetarian, sandwiches aren’t really my thing. At least, they weren’t my thing until I discovered Court Street Grocers, a Brooklyn-based sandwich shop that now has four locations in New York City.

Not only do they serve spectacular classic sandwiches, but they also offer creative vegetarian versions of many of them: ham and cheese can be made as a yam and cheese (roasted sweet potato with whipped goat cheese), an Italian hero becomes a vegitalian (made with butternut squash in place of mortadella and capicola), and, my all-time favorite, a classic reuben becomes a broccoli reuben, made with crispy roasted broccoli, Swiss cheese, and sauerkraut on rye. It’s so good that even when I order it to go, I can’t make it a full block without devouring the first half. Here’s my at-home version of their crazy-good creation.

Just last Sunday, I was walking down the street when I overheard not one, but two conversations about Trader Joe’s. The first was a guy on his cell phone who was saying, “No, man, you’ve gotta get them at Trader Joe’s. You really shouldn’t get them anywhere else!” (It took every ounce of willpower in me to not totally insert myself into his call and find out what he was talking about.) The second conversation was a mom with her two young kids: The smallest was just singing aloud, “I love Trader Joe’s. I love Trader Joe’s. I love Trader Joe’s.” That 4-year-old knew what’s up.
