Few things in life provoke envy like international Costco food courts. They have such interesting, delightful-looking things like pizza al pastor and beef bakes instead of chicken bakes.

And somehow the familiarity of the Costco food court format just makes it worse. I expect restaurants in Iceland and Taiwan to have interesting things I don’t have in my town, but when I see those things in the context of a Costco food court I’m always momentarily taken aback.

My husband and I had a very hard time registering for our wedding. (We would have gone without a registry entirely, but our families insisted.) A while ago Maria Ribas said, “Cookbooks exist to help us cook,” and that statement really got me thinking. Of course there are the recipes, but there’s so much more to take away from our cookbook collections. The best tidbits to be found in cookbooks (both new and old) that truly make us better home cooks are the tips and sometimes-unexpected cooking methods that take us out of our comfort zone and usual habits in the kitchen.

Armed with a fresh package of pork chops, I turned to some cookbook classics. Here are the smartest tips I learned.

I pride myself on the fact that I have never dropped my phone in a toilet or spilled coffee on it. (My poor laptop is another story. RIP, Lisa’s MacBook!) And I tend to do everything in my power to keep up those bragging rights.

You can quench a taco craving with fish tacos, chicken tacos, cauliflower tacos, or breakfast tacos, but a ground beef taco is the quintessential taco in my book. When weeknight cooking calls for serving a crowd, trade tortillas for tender noodles and serve it hot and bubbling straight from the Dutch oven.

This weeknight pasta checks all the right boxes with family-friendly flavor, a streamlined ingredient list, and simple one-pot prep.

Turkish Get-up:

Climb to a new 1RM using warm-up sets of no more than 2 reps (each side) before adjusting weight. Rest as needed, and keep total number of lifts under 12 (Ex. 2L + 2R x 2, 1L + 1R as needed).

Note: Achieving a 1RM is not done at all cost of mechanics, form, range of motion, or composure. Unless there’s money on the line, position and execution always govern weight.
