No need to skip the stuffing if gluten isn’t your thing — just reach for cornbread instead. Here, cubes of gluten-free cornbread are mixed with a medley of sautéed mushrooms, toasted pecans, and the usual suspects of onion, celery, and fresh herbs for a hearty stuffing fit for anyone’s table.

We’re supersizing this batch of stuffing so you can make it for a full table of guests or simply enjoy the leftovers after the big dinner — that’s if you’re so lucky to have any.

What are apple dumplings? Think of them as bite-sized versions of apple pie (only better), with all the goodness of a flaky crust and gooey apple filling. Many are made with whole apples, but the ones I’m hooked on are made with diced apples, which make them super easy to eat. I love picking some up from a local farm stand as a treat for my family and, no matter what, I always eat one straight away. They’re that good! And because they’re so small, I can eat another one (or two) later and not feel guilty.

Although apple dumplings have become synonymous with the Pennsylvania Dutch, they feel right at home in the Catskills and the Hudson Valley, especially since we’re surrounded by orchards on all sides. These areas were settled by the Dutch, too, who likely used fattened milk and flour pastry to enclose apples and raisins, sweetened with sugar, as a breakfast item or dessert.

If you don’t know what salmon rillettes are, you’re missing out. Creamy but light, flavorful without being overpowering, think of it as salmon’s answer to paté. It’s a spread that’s sure to impress, and it’s deceptively simple to make.

This version comes from Talbott & Arding, an upscale larder in Hudson, New York. Named after its proprietors, Mona Talbott and Kate Arding, this is a place you could easily get lost in: heavenly baked goods, local cheeses, all manner of pickled things, and a refrigerator stocked with miniature pots of decadent goodies like this one.

Vacation Rental: Haviland House in Hudson, New York
Sleeps: Up to 6 guests
Price: Starting at $450 per night; 3-night minimum
Why We Wanna Cook Here: Look at those dreamy windows!

When we travel we believe in staying in real homes as much as we can; to really taste a place means cooking local food in a local’s kitchen. And if you’re traveling to the Catskills (check out our Bite-Sized Guide to the Catskills) here’s a vacation rental to love.

What’s not to love about this chic country kitchen in a historic row home in Hudson, New York? From the French windows flooding the space with morning light to a spice drawer that would make Marie Kondo proud, not to mention a Miele dishwasher — and you know how we feel about Miele — this is a place that inspires culinary greatness.

Or, at the very least, a good cheese plate, provisioned with our favorite upstate triple creme and crusty bread from the bakery down the road.

There’s something wonderful about a basket full of warm dinner rolls on the dinner table, but for many gluten-free eaters, the bread basket has been off-limits for too long. Not anymore! This easy recipe makes rich and tender rolls that gluten-eaters and gluten-free eaters adore.

Who: Tracy and Jamie Kennard, owners of wine bar Brunette
Where: Kingston, New York

Tracy and Jamie Kennard are the wife-and-husband owners of Brunette, a natural wine bar in downtown Kingston. They’ve converted the space, a former barber shop, into a sweet and stylish spot where you can nibble on gougères over a glass (or a bottle) of something intriguing — orange wine, perhaps? Interesting wines like these, Tracy tells us, are what the bar has become known for, although there are plenty of other colors to tempt.

She also explains that the decision to open Brunette was based on their desire to spend more time upstate. Tracy is a fashion and lifestyle consultant; Jamie is a graphic designer; and both travel back and forth to the city to keep these endeavors running. But they were longing to make the Catskills a more permanent home. And if you were to visit their tiny house, you’d understand why.

Let me tell you the secret to holiday baking success: You can fully bake pumpkin pies right now and freeze them to enjoy later. Because of their fat content, fully baked pie crusts freeze beautifully, and the rich custard fillings of pumpkin pie and sweet potato seem as if they were designed for freezing too. There are a few extra steps that make freezing baked pumpkin pies easier, but they aren’t any harder than baking the pie itself.
