One of the foods I most long for from my childhood bopping around Jewish delicatessens in New York and Los Angeles is the humble bowl of matzo ball soup: a mountain of tender dumplings surrounded by rich stock and not much else.

As a child I would nibble each tender spoonful, carefully whittling down my knaidel (as “matzo ball” is called in Yiddish). I felt comforted and loved, not from my grandmother’s kitchen, but by those fascinating, mostly ancient servers who dished it up. Over 20 years ago, my darling nanny and I attempted to make this soup at home. How’d we do with this highly regarded (and oh-so-controversial) dish? Did I change up the original recipe?

I’ve always been one to sleep late, and I’m a huge advocate of napping. It must run on my mother’s side since my sisters share this fondness for snoozing. My father, on the other hand, is up before dawn and only needs an occasional five minutes of shut-eye in his recliner to recharge his batteries. But nap time is one thing; an energy crash at 4 p.m. when I’m running on a deadline is another.

I like charred meat so I just formed a belief that fiber from vegetables, fruit, and psylium simply carry out any nasty carcinogens. It’s not very scientific, but I sleep well. This has saved me a few times from long articles that prove my premise. :)

Nachos certainly have a time and place. When I was in college, that time and place broadened exponentially to include pretty much anywhere and any time, but today things have certainly changed. We make nachos occasionally when the Super Bowl is on or when a group of friends are over to watch a movie, so to try and persuade me that nachos belong on the breakfast table would be stretch, but after working on this recipe, I’m a changed woman.
